Comin' 'Round the Home Stretch

“We’re eating these. Today.” I thaw a salmon steak, shake frozen green peas into a bowl, and toast a tray of pecans.

"Finishing strong, finishing strong," comments Jeff as he sees our December feasts appear in the kitchen.

With only a week to go in our year-long hand-harvested food challenge, this is no time to hoard treats. I am tired of letting our tastiest food go stale. Freezing is no guarantee of long-keeping flavor. Canned food is notoriously long-lived but isn’t exactly improving in storage, either. Dried food will keep you alive for years but again, isn’t gathering nutrients along the way. I have faith that the next season of vegetables will come from the garden soon, with just enough time for us to eat all our squash.
